Ingredients

  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, salt, baking powder, and ground cinnamon in another bowl.
  5. Gradually add the dry mixture to the butter mixture, mixing until a dough forms.
  6. Roll out the dough on a floured surface to about 1/4 inch thick and cut into rectangles.
  7. Place a spoonful of brown sugar filling in the center of half the rectangles, then top with another rectangle and seal the edges with a fork.
  8. Transfer to a baking sheet and bake for 12-15 minutes or until golden.
  9. Mix the powdered sugar, milk, and vanilla extract until smooth to create the glaze.
  10. Drizzle the glaze over the cooled cookies.

Notes

You can freeze the dough for up to a month or customize the filling with fruits or chocolate chips.
