- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, salt, baking powder, and ground cinnamon in another bowl.
- Gradually add the dry mixture to the butter mixture, mixing until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thick and cut into rectangles.
- Place a spoonful of brown sugar filling in the center of half the rectangles, then top with another rectangle and seal the edges with a fork.
- Transfer to a baking sheet and bake for 12-15 minutes or until golden.
- Mix the powdered sugar, milk, and vanilla extract until smooth to create the glaze.
- Drizzle the glaze over the cooled cookies.
Notes
You can freeze the dough for up to a month or customize the filling with fruits or chocolate chips.
