Description

A delicious blend of crispy potatoes, savory sausage, and rich hollandaise sauce that transforms breakfast into an extraordinary culinary experience.

Ingredients

Scale
  • 4 medium Russet or Yukon gold potatoes, peeled and cut into pieces
  • 2 cups cheese curds (or fresh mozzarella or feta)
  • 1 pound breakfast sausage (mild, spicy, or vegetarian)
  • 1 cup hollandaise sauce (homemade or store-bought)
  • Fresh chives, parsley, or dill for garnish
  • Salt and pepper to taste

Instructions

  1. Prepare the crispy potatoes: Fry or bake them until golden and crisp, about 15-20 minutes, tossing with oil, salt, and pepper if baking.
  2. Cook the breakfast sausage: In a skillet, cook the sausage over medium heat until browned and fully cooked, about 8-10 minutes.
  3. Prepare the hollandaise sauce: Whisk egg yolks and lemon juice in a pot, gradually add melted butter while whisking, until thick and smooth.
  4. Layer the crispy potatoes, breakfast sausage, and cheese curds on a warm plate.
  5. Drizzle the hollandaise sauce over the top.
  6. Garnish with fresh herbs and serve hot.

Notes

Make hollandaise sauce ahead of time and keep warm, and consider sautéing vegetables for added flavor.
