A delicious and easy-to-make Beef Enchilada Casserole that is perfect for dinner.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 corn tortillas
- 1 onion, chopped
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
- Add garlic powder, cumin, salt, and pepper to the beef mixture.
- Stir in the black beans, corn, and half of the enchilada sauce.
- In a baking dish, layer 4 corn tortillas, half of the beef mixture, and half of the cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
- Pour the remaining enchilada sauce over the top.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
Notes
- Feel free to add your favorite toppings like sour cream or avocado.
- This dish can be made ahead of time and stored in the refrigerator.
- For a spicier version, add jalapeños to the beef mixture.
