Ingredients

  • 1 can (15 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 corn tortillas
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
  3. Add garlic powder, cumin, salt, and pepper to the beef mixture.
  4. Stir in the black beans, corn, and half of the enchilada sauce.
  5. In a baking dish, layer 4 corn tortillas, half of the beef mixture, and half of the cheese.
  6. Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  7. Pour the remaining enchilada sauce over the top.
  8. Bake for 25-30 minutes until the cheese is bubbly and golden.
