- 1 lb tomatillos, husked and rinsed
- 4–5 green chilies (such as jalapeños or serranos)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tsp cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place tomatillos and green chilies on a baking sheet and roast for about 15-20 minutes until they are slightly charred.
- In a blender, combine the roasted tomatillos, green chilies, onion, garlic, and vegetable broth. Blend until smooth.
- Pour the mixture into a saucepan and add cumin and salt. Simmer for 10-15 minutes to allow the flavors to meld.
- Serve hot, garnished with fresh cilantro.
