- 2 lbs chicken thighs or drumsticks, skinless
- 2 tablespoons curry powder
- 2 Scotch bonnet peppers, chopped (adjust to taste)
- 1 can (14 oz) coconut milk
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 bell pepper, chopped
- 1–2 carrots, chopped
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
Instructions
- Prep the chicken by cutting it into even pieces and marinating with salt, pepper, and curry powder for at least 30 minutes.
- Heat the oil in a large skillet over medium heat and sauté the onions, garlic, and ginger for about 3 minutes until fragrant.
- Add the marinated chicken, browning it on all sides, and then toss in the bell peppers and Scotch bonnet pepper.
- Pour in the coconut milk, stirring well, and bring to a gentle simmer.
- Reduce the heat, cover, and let it simmer for 30-40 minutes, stirring occasionally.
- Adjust seasoning, and thicken the sauce if desired by simmering uncovered for a few more minutes.
- Serve hot over rice or with warm bread, drizzling the sauce generously on top.
Notes
For best flavor, consider marinating the chicken overnight. This dish can also be made in an Instant Pot for quicker cooking.
